Who doesn’t love a good brittle? This recipe is super customizable, fast, easy, and you can use almost any topping – so get creative! NOTE: The ingredients above are based on my boxed mix and my modifications. If your boxed banana bread mix asks for other ingredients like an egg, etc. – make sure to follow that as part of the instructions. I chose not to use any butter and used coconut oil instead. That is an easy swap that you can make no matter which boxed mix yo use. The cranberries and cacao were additions that I decided to add and that will work seamlessly with your boxed mix as well. This lemon chicken is a favorite in our house. It’s super easy, takes pretty much no prep, and is very healthy! I use organic ingredients, no salt, and then bake it!
My whole family loves this dish and it goes with pretty much any veggie or other side dish. Personally, I’m a fan of serving it with fresh cherry tomatoes, avocado slices, corn on the cob and quinoa. NOTE: This is vegetarian lasagna soup recipe. It’s a great way to get more veggies into your kids diet! If you prefer to use ground beef, cook about 1 lb in a large skillet over medium high heat for 6-8 min (or until cooked through). Drain on a paper towel lined plate before adding to the your slow cooker. I prefer using Beyond Beef as it adds the same texture, is a lot less work, and adds a ton of vegetables to this meal. My meat loving family doesn’t even know the difference 🙂 Yay! It has 13 g of protein, half the fat of ground beef, is gluten-free, soy-free, has no cholesterol, antibiotics or saturated fat! Looking for something yummy, easy and a little special for breakfast? On the weekend it’s a little less chaotic in the morning – so I enjoy making something extra yummy for the family. That being said – I’m also exhausted after a long week of juggling schedules and checking things off of my to-do list!
This recipe has a kitchen hack that you can use in many other ways. It’s special (hot out of the oven) and isn’t full of sugar (like many baked breakfast treats). You can also customize these in any way you want! I’ll tell you how in a few – but first – let’s get our Ham & Cheese on! 🙂

The kids loved these little breakfast treats – and so did my hubby! You can see Gabe lounging and munching away. I got a big smile full of ham and cheese – but I’ll take it! Big win for mommy!
The nice thing about this recipe is that you can customize them any way you like. I don’t eat meat, so I didn’t put ham in a couple of them. I kept them cheese only. They were perfect with a little jam on the side.

The brand of crescent rolls I like to use are organic, have no bleached flour, no hydrogenated oils, and no artificial preservatives – so I feel like this kitchen hack is still on the healthier side. There are so many options out there – pick what you prefer.

Creating a birth plan for the first time can be really stressful! Or at least it was for me! I was very unsure about what to include, how specific I needed to be, and when I was supposed to have it done. Not to mention feeling obligated to do things without any pain medication or help! Arg! The thing is, a birth plan is most helpful for your first pregnancy because it gets you to really think through all the important details of labor and birth. It also helps push you to ask lots of questions and keep communication open with your birth team.
For my first pregnancy, I took a ton of time to create my birth plan. Is was super long and it had a lot of detail. Was that a bad thing? Not at all! It really helped me to think things through – and ask my doctor, doula, and hospital lots of questions. That being said – nobody read the whole birth plan after I printed it out. Truthfully – since I had discussed everything with my birth team in detail and asked so many questions – my doctor, doula and husband all knew what was most important to me. For my second pregnancy – I had already thought through everything and been through labor/delivery before. Although each pregnancy and baby is unique – I knew what to expect (to a point) and didn’t require a lengthy birth plan to feel comfortable. In fact – I didn’t even write one the second time around.
Birthing classes can help a lot when getting ready for your first delivery. We took a fantastic one before I had my son – and I learned some helpful information and several tips for creating my birth plan. The nurse who taught the class has helped deliver hundreds of babies, gave birth to two sons of her own (with epidurals due to both sons being in the breech position), and is a triathlete! Talk about an amazing woman!
She brought up many things that really helped me. First of all, remember that all pregnancies are different. When someone tells you how you should give birth (no pain medication, in water, at home, without a doctor, or anything else) – you need to remember that you are unique, so is your baby, and so is your pregnancy.
Personally – I think giving birth in a hospital is the way to go as you don’t know what kinds of emergencies may arise. That is something you must discuss with your doctor. You should think about the health of you and your baby, and about how to keep everyone safe. You should also research the hospitals in the area and figure out what fits your needs and wants best. Schedule a tour (if they give them) and find out what they need in terms of paperwork and when they need everything.
As for pain management – you don’t know what you will require in the moment. You may have a plan to be 100% natural and end up requesting an epidural (I sure did)! You may have an epidural as part of your birth plan but end up not wanting it. Your baby might be in the breech position. You may be in more pain than anticipated and require some assistance to manage the it. An epidural isn’t the only way to manage the pain – so discuss the options with your doctor.
Again – you are unique and the pain you feel will not be the same as your friends, the people in your birthing classes, your coworkers, or even your family members. I’m the same mom – but my pregnancies, labors and babies were different! Don’t let others make you feel guilty for wanting to have help or for making a pain management plan. Being informed on what pain management options are available and having a plan will help you make educated decisions in the moment. Knowledge is power 🙂
My #1 piece of advice is allow yourself to be flexible.
You need to be able to pivot on a dime. You can absolutely gather advice and best practices – and come up with a list of what you feel is important while giving birth. That being said, you need to be able to deviate from your plan because baby doesn’t have a plan. Baby needs to get out safe and sound. You and baby both need to be safe and healthy. Ultimately, that is what matters.
My #2 piece of advice is keep your birth plan short and to the point. Don’t overdue it with the requests – only the most important instructions and wishes should be included. I put together one birth plan for my husband and doula, and a separate one for my doctor and nurses. That helped keep the version for my doctor/nurses short and to the point with the info they care about most. Does my doctor care about my music choices, candles and movie choices? NOPE! Does my husband? He better! 😉 lol!

Remember – A birth plan is for you to describe your wishes for labor, birth, emergency situations and post-birth care. It is important for you to remember that the nursing staff and doctors want you and baby to be healthy and safe – so know that you can provide your birth plan but that things may not go according to plan.

Weeknights can be tough when it comes to dinner. In case of emergencies – I ALWAYS have a handful of items in the house to make chili. This is the easiest chili recipe ever – and it is full of mommy kitchen hacks! 🙂 The big bonus for me is that this chili is FULL of veggies (great for the kiddos) – makes a good amount of leftovers – and takes under 10 min to make. HUGE WIN!
In my world – healthy kitchen hacks make me happy! In the picture below, you will see the items I keep in my freezer and pantry that make it possible to make an amazing and crazy fast chili for my family.
Do I prefer fresh ingredients? YES! Would I rather make this amazing organic chili using these ingredients vs. order takeout? YES!

You may have noticed that most of the items I used in this are salt free (when possible). I like to cook with as little salt as possible – and trust me – this chili doesn’t need it! The chili blend is salt free as well – and is delicious! Some items do have salt and when mixed with the salt free ingredients – balance it all out. You’ll feel so much better without the extra sodium – and it’s much better for adults and kids alike!
Yes this is a vegetarian chili. You can add meat – but it will take a lot of extra time to cook the meat, drain it, and add it into the chili. Also, you will miss out on the added veggies from the vegetable protein that I use.
Beyond Meat (or similar substitute of choice) is a fantastic mommy hack to get your kids to eat more veggies! The texture is like ground beef – but it’s a lot healthier! The one I use (see above) is soy free, non GMO, gluten free, cholesterol free, vegan, and kosher! Not to mention has 13 grams of protein per serving! You can also try Quorn which is another fantastic plant protein crumble that mimics ground beef really well in chili. Plant protein that tastes like ground beef in your chili! Yes please! Great trick to get kiddos the veggies they need! 🙂
Also, for any canned products you purchase (for beans, tomatoes, etc.) please be sure to only pick cans that have a BPA free lining! This should be available in most if not all grocery stores these days!
One last trick – don’t tell your kids what’s in the chili if they are picky eaters! Let them try it and see how it goes! My nephew didn’t want to eat this chili because it has onions – and he “hates onions.” That being said – I told him that I took the onions out and he ate the whole bowl and asked for seconds. Yes…I know I fibbed a bit…but he needed to try his dinner and he ended up loving it! lol! If it tastes great – is super healthy – and was crazy easy to make – why ruin it all by telling them what’s in it??? Once they love it, tell them what is in it and have them help you make it! Fun!
