Fried rice is such a fantastic meal! It is comforting, delicious, and complete. It is hearty, has veggies, protein and yummy scrambled egg! I don’t know anyone who doesn’t like fried rice! That being said, I don’t love the calories or salt involved in take out fried rice. So…I started making cauliflower fried rice! I’ve tried several recipes and eventually combined my favorite parts of them all to get this recipe! Yay! Give it a try 🙂 It’s delicious and healthy!
