4th of July Style Roundup!

Happy Mommy Monday! Today I want to talk about Summer. This time of year is my favorite for so many reasons! The sun, family activities, BBQs, long walks with my kids and dogs, and the DRESSES! My collection of sundresses has grown recently – due to way too many cute ones out there! Arg! Why are there so many adorable options!?! The fantastic news is the ones I’ve found and love are a steal!

This is a roundup of my favorite summer dresses, kids outfits and accessories in Red, White and Blue so you can get ready for the 4th of July without breaking the bank! That being said, I like to get the most bang for my buck, so most of my picks can be worn the rest of the summer, not just for the 4th! Read on for details – and ENJOY! XOXO

This cutie linen dress is white with light blue stripes. It’s strapless and has a flounce front that gives it movement. It has an elastic waist and comes with a belt tie in the same fabric – but looks perfect with a belt to as well. I’m short and feel boxy in certain dresses, so a belt was a must for me. The fabric is light and very comfortable. This dress is adorable with wedges or flats – and can be dressed up or down with accessories. I was able to run after Sofia all day in comfort and style! The best part is this dress is only $45! The price and cuteness made it a no brainer for me…because I have such good self control to begin with! 😉

As a side note – I had a bit of a twinning moment with Sofia, who is wearing a Baby Gap white dress with blue stripes. I love matching my little ones when I can – and take full advantage while they are young and willing to match mommy! Ha! For reference, I’m in the size Small.

As for Sofia’s dress, it’s no longer available at the Gap but I found a blue smock dress that is on sale, and a beautiful crochet double layer dress that I’m obsessed with (also on sale)! Both would look so pretty on your little – especially when you’re in this white/blue dress! 🙂

This cutie dress is blue with white stripes. It is off the shoulder, has a flounce front, and a side zip. It has a nice shape that shows off your waist without being too tight, and a comfortable skirt that moves and flows. This dress can easily be dressed up or down, depending on the occasion. 

Did I mention it is only $40 and a total steal! I plan to sport this all Summer long – but it is a win for me that it also works for the 4th! Yay! Just for reference, I’m in a size Small and it is still has room.

 

Next up is this fun little number in navy. It’s cute, has a very appropriate front, and a fun flirty back! I belted this dress because I like a more defined waist.

It is extremely comfortable and is perfect for a picnic in the park. I wore this to soccer practice for my kiddos and was able to run around with them in the playground and park afterwards. Talk about comfy and cute!

I love the navy color because you can sport this for the 4th just by adding a red statement necklace, bangles, or shoes! You can also wear this all summer long with different accessories. The best part about this dress is that it’s only $42! For reference, I’m wearing a Small. Snag it before it’s no longer in stock!

This is one of my absolute favorite dresses right now! It’s red, white and blue all in one! It’s also off the shoulder, crazy comfy, and has removable straps. The red embroidery is beautiful, and the flouncy sleeves are so cute! Can you tell I’m in love! It’s currently out of stock but I love it so much that I’m including it in this roundup so you can keep an eye out for a restock! If you like these blue stripes with red embroidery, Francesca’s also has some super sweet shorts that are perfect for the 4th! Not to mention they are on sale for under $15 (sale ends on 6/28)!

This fun striped dress and chambray vest were perfect for our outing to visit some farm friends! To me – these stripes and the red, white and blue combo say -Happy 4th!!!!

This t-shirt dress is form fitting but very stretchy and comfortable. The front and back dip down a little bit which is nice for a little extra coverage when you’re running around town (or after kids). The vest is versatile, comfortable, has POCKETS, and can easily be paired with other dresses, skirts, shorts, etc. To me, that is a big win! The dress is a bargain at $36 and the vest is $48. I am sporting a small in both -and they fit perfectly. Comfy, not too tight, with enough room to chase after Gabe and Sofia! Ha!

For a white, light and airy dress – this one may be your pick! It’s currently 40% off at Nordstrom and is so pretty on! It has a tie front (which you can adjust), smocked back that gives it a comfortable fit, a midi-length perfect for a family outing, and a sweet eyelet embroidery to finish it off. I personally don’t think a bra is an option in this dress, so keep that in mind as you look at this design. It’s currently on sale for $53.40 and can truly be worn for almost any Summer occasion! For reference, I’m in an extra small.

This blue and white boho maxi has the prettiest pattern on it! Perfect for Summer, and perfect for the 4th!

It can be dressed up or down, worn with flats, wedges or heels, belted or left alone, and you can add a splash of red to really show off in July!

It is a high-low dress with flutter off the shoulder sleeves and an elastic waist. It’s very flattering on, flows nicely, and is perfect to simply throw on and go! Not to mention it’s only $46!

Truthfully, this would be perfect for a brunch with the girls, lunch with your honey, on vacation, or even a picnic! For reference, I’m sporting a small in this one.

 

If you’re looking for something with long sleeves, this is it! This seersucker dress is blue and white, super sweet, and has the cutest flounce sleeves! As I’m sure you’ve already noticed, I like belting my dresses to give myself more of a waist, but you don’t have to. I actually think a red belt could be perfect for the 4th and would give this dress a little splash of fun!

 

It has a zip back, high neck, is light weight, and has a really lovely shape to it. This front view shows the sleeves a little better than the side view. Really cute detail!

This classy little Summer dress is a wonderful option for the 4th, and would pair perfectly with a statement necklace due to the higher neckline. It’s $39 (which is ridiculous for how cute it is) – and I’m wearing the small for reference.

Now for some quick momma accessories!

These faux leather toe ring sandals are super comfy, cute, and look WAY more expensive than they are! I’ve had people ask if I got them at JCrew – which I take as a huge compliment since they are under $10! I love them so much that I got them in 3 colors! And I was able to get them all because they are only $9.90 from Forever 21! Obsessed!!! Please see if you can still snag these – you won’t be sorry! 🙂

I’ve worn these sunnies a lot lately and have gotten a lot of questions about them. They are from Nordstrom and are only $12. I mean – how can you even consider not getting these?

 

Speaking of another item I’ve worn a lot lately…this belt! It’s 2.5″ wide, leather, has a slim buckle strap, scalloped trim with laser cutouts that give you a tinier looking waist, with a stretchy panel in the back for comfort/fit. I’ve worn this with almost every dress listed in this roundup (as I’m sure you’ve notice – haha), it’s super comfortable, and it looks really pretty! 🙂 Not to mention  it’s 40% off at Nordstrom right now – for $29.40!

Ok party people! Now for some fun options for the kiddos!

If it isn’t already obvious – I love off the shoulder dresses! I found this adorable little red dress for my daughter at Target and it is PERFECT for the 4th! It’s an A-Line eyelet dress by Genuine Kids from OshKosh. The material is soft but sturdy, so it can hold up to a toddler on the go. The shoulders can be worn off the shoulder or on, and the length is perfect so they can run around. I’m in love with this cutie dress – can you tell? It’s currently $19.99 at Target – and seems to fit pretty true to size.

I have to give a shout out to Gymboree for having a fantastic sale right now! The whole store is $12.99 and under (not sure for how much longer) – and it is SO worth checking out! I’ve pulled together a couple outfits (some in this flat lay and some not) using fun items that I got on my last Gymboree visit.

 

The dress is blue and white with red stars. The back is criss cross (adorable), and it comes with bloomers. Super comfy cotton fabric makes for a perfect dress for your toddlers 4th of July fun in the sun! I got it on sale for $12.99 and it is so worth it!

 

If your little one prefers shorts and a tank on a hot day – these will do the trick! The shorts are $9.99 on sale, and the top is the same! Super cute, festive, and perfect if it’s super hot out and they want to run and play! Not to mention those popsicle shorts are too cute for words…

These red cargo shorts are wonderful for the 4th! Because they are solid, a lot of different tops can be worn with these shorts so you can get more wear out of them 🙂 I sized up for my son since they have an adjustable waist. I intend to use these a lot! Snagged these on sale for $12.99!

What do you pair with red shorts? A super cute top! This chambray star shirt is fun, festive and can be dressed up or down due to the collar. It’s $12.99 and is a total steal! I’m a big fan of all things chambray…I can’t help myself!

If you want a more versatile shirt that can be used more easily after the 4th, this top is the perfect shade of blue! It’s also a soft and light 100% cotton jersey top – which is perfect for playing outside all day or going to lunch with the fam! This option is currently $9.99 (while sale lasts).

As for accessories, you can get this cutie bracelet for under $5 – and it shouts Happy 4th! They have a crystal one as well that Sofia loves and it matches EVERYTHING!

These little eyelet espadrilles are everything! I’m obsessed – as is my baby girl. In fact, she’s not even 2 and she picked them out herself! #mommasgirl #proudmomma

They are on sale for $12.99 (for now) so snag them ASAP! They match everything and instead of a buckle they used velcro – LOVE!!! They don’t come in half sizes but they do seem to run a tiny bit big so I went with her actual size and there is a little room to grow. Might have to get them in a size larger while they are still on sale (for future use)!

Easy Taco Bowls

Happy Foodie Friday! I’ve posted a lot of family friendly recipes, but Friday is going to be my recipe day moving forward. It should give you something new to try over the weekend – or you can use it as you meal prep for the following week.

Ok…who doesn’t love tacos? I mean – Taco Tuesday exists for a reason – right? No, it isn’t Tuesday, but I want to share this as another easy, family friendly, healthy recipe for any day of the week. 🙂

My taco bowls have all the fixings, are crazy easy to put together, and are much more healthy than your traditional tacos. I hope you have as much fun eating these as I do with my family!

INGREDIENTS:

  • 1 – Small yellow onion (diced)
  • 1 – 11 oz Bag Beyond Beef (or alternative vegetable protein)
  • 1 packet – Low sodium organic taco seasoning
  • 1 cup – Cooked organic frozen corn. I use a silicone steamer to steam organic frozen and fresh veggies in a snap!
  • 1 can – Organic black beans (drained)
  • Organic cherry or grape tomatoes
  • 1 – Large organic avocado
  • Shredded cheese (taco blend or other)
  • Tortilla chips
  • 1 Tbsp – Olive oil
  • Hot sauce (optional spice)
  • Sour cream (optional garnish)

INTRUCTIONS:

  • Heat olive oil in large sauté pan on medium heat.
  • Cook diced onion until it starts to look translucent. This should happen pretty quickly, so to be sure to stir and keep an eye on the onions so they don’t burn.
  • Mix in the entire package of Beyond Beef (or other protein of choice). I love this option because it is made of vegetables, has the texture of ground beef (perfect for tacos), and you don’t have to drain it. Not to mention how healthy it is! Trust me – it’s a perfect substitute when making tacos or taco bowls.
  • Once heated through, mix in your taco seasoning. I usually only use half a packet because the Beyond Beef is only 11 oz. You can season to taste, but start slow, you can always add more.
  • Distribute the cooked Beyond Beef and onion mixture into bowls. Top with the cooked corn, drained black beans, tomatoes, cheese, avocado, and a couple of crushed tortilla chips (photos below). My kids like to crush their own tortilla chips on top since it’s pretty fun!
  • NOTE: You can add or take out any toppings you like! Try using pinto beans and heirloom tomatoes instead in a variety of colors! It’s a great way to introduce your kids to new veggies and flavors. Dan and I use hot sauce on ours, but we omit the extra spice for the kids. You can even top with a dollop sour cream. Get creative and have fun with this one!

Creating a Car Emergency Kit

Hi Mommas! Kids activities can mean a lot of car time. For me, being on the go is a guarantee. We have soccer, swimming lessons, art classes, Gymboree, play dates at the playground, preschool drop off and pickup, and more!

Kids on the go often times get bumps, bruises, and other injuries. We do our best to keep them safe, but life happens! On that note – you may need to address an emergency while you’re on the go. It’s not just the kids either! What if you as the parent end up with a scrape, headache, or other need while out and about? If you are a parent on the go – it’s a good idea to put together your own car emergency kit.

This is my take on it – so feel free to add things you feel are important. I hope this helps you feel more prepared when you are on the go and confronted with the unexpected! That, in my opinion, is a HUGE WIN!

What You Need:

  • Container – A shoebox or appropriate sized container with a lid to hold your items. The Container store has clear plastic boxes in a variety of sizes that I LOVE for things like this. Target has a pretty good selection as well.
  • Waterproof band aids – I recommend having a variety of sizes just in case. You can purchase a variety pack – but make sure to have larger and smaller sizes handy, as well as butterfly closures. Personally, I like having some that are big enough for knee scrapes on hand, as well as smaller ones meant for knuckles and fingers. You may need to purchase a couple boxes and put some in the kit (in a plastic baggie) and keep some at home.
  • Arnica gel or cream – I personally use Arnicare gel for bruises. It helps reduce pain, swelling and discoloration. If the kids fall and get a bump, I put the gel on right away and it gives them some relief.
  • Triple antibiotic ointment – Please note that some people have an allergy to antibiotic ointments. You most likely already know if you or your kid has an allergy. If you’re not sure, ask your pediatrician about alternative ointments for scrapes and cuts.
  • Instant ice packs – Make sure you have a couple just in case of falls and bruises.
  • Instant heat packs – This is something I would add in the colder months. If you already have your emergency kit made from the summer months – add these in as it gets colder outside. Think about outdoor sports like soccer, football, or even sitting and watching a concert outdoors. If your child (or you) needs some extra heat – you have it covered!
  • Bottled water  – You can have a small one in the kit and/or a couple bottles in the trunk for emergencies.
  • Baby wipes – These come in handy for a variety of needs. Get sensitive wipes that are chemical and scent free in case you need to use them for cuts, scrapes, etc. I like the free and clear sensitive wipes for my family.
  • Hand sanitizer – Pick a brand you like best. There are a ton of options out there that are alcohol free, kid friendly, etc.
  • Sanitizing wipes – Great for wiping off kids hands and sanitizing at the same time.
  • Flushable wipes – These are fantastic when you stop the car so your child can potty, and the bathroom doesn’t have TP. There will most definitely be a time that happens – and these will keep you prepared!
  • Sunscreen – Always good to have this on hand. Pick your preferred kid friendly brand (works on adults too).
  • Eye drops – Great for allergies or other eye needs.
  • Eye wash – Pick one with the little cup for rinsing out eyes. Eye wash is helpful for sand, dirt, pollen, or whatever needs to be washed out of your kiddos eyes. I like to have this at home as well.
  • Bug spray – Pick your favorite kid friendly option. You never know when you’ll end up outdoors in an area with bugs trying to bite you and the fam!
  • Antacids – Tums smoothies are my go to for the kit. This is for me as a parent on the go. If you want to get an antacid for your kids, please ask your pediatrician for advice.
  • Acetaminophen and Ibuprofen  – Kid and adult versions so the whole family is covered. Liquid form for younger kids. Be sure to know the correct dosage for your kids based on age and weight.
  • Allergy medication – Kid and adult versions so the whole family is covered. Liquid form for younger kids. Be sure to know the correct dosage for your kids based on age and weight.
  • Anti-nausea medication – Ask your pediatrician for a kid and adult recommendation. If your child is too young – this may just be for you as an adult in an emergency.
  • Aquaphor – Keeping a large tube of this on hand is amazingly helpful! I use this for the kids cheeks if they start to get dry and/or red, on their bottoms if I don’t have rash cream handy, on their upper arms and thighs if they start to get little bumps (they have sensitive skin), etc. There are so  many uses and it can even come in handy if you need some for dry hands on the go.
  • Baby powder – I’m a big fan of the Burt’s Bees baby powder because it is talc free and smells amazing! It’s great for hot days to put behind sweaty knees/elbows, on feet/toes, or on a baby bottom.

Please ask your pediatrician for updated dosing on basics like Acetaminophen and Ibuprofen, Benadryl, etc. They can tell you based on age and weight what is safe for each child. Write it on a 3×5 card – or use a sharpy on the lid of your box – so it’s handy. Think of it as a medicine cheat sheet. You may personally know the dosing for your kid(s), but what if a babysitter, grandparent, nanny, spouse or friend is taking your the kids to an activity? Do they know the correct dose for each child? You can also list any allergies and emergency numbers in the same place. A little food for thought as you put together your kit. 🙂

Toy & Home Storage Ideas

In my house, I am constantly picking up my kids toys! Yes, we teach them to clean up after themselves while singing the clean up song. That being said, they love to carry toys from room to room – and floor to floor. That means I am constantly trying to move toys back to their “home” – aka – the correct place in our house. To make things more interesting, we have dogs. If toys are on the floor and not where they belong – there is a HUGE chance the toy will get chewed up. That is a BIG incentive for the kids to clean up…but it does not entirely solve the problem.

I’m a fan of toys (and other items) having a “home.” Yes – I am a person who loves to organize and believes things should have a place. That is how I find things easily for each person in my house. Trains go on the train table, books on the bookshelves, puzzles on the puzzle shelf, keys in a basket in the foyer and so on. To make my life easier, I’ve come up with some storage solutions that organize and declutter my house (most of the time). Try them out and hopefully you will feel more organized and zen in your home! 😉

Storage ottoman: I’ve linked to an affordable storage ottoman that I personally own. There are other ottoman options out there, but I’ll walk you through why I like this one and you can look for something with similar qualities if you agree with my list. First of all, it’s squishy! For me that is a big deal because my kids love to climb all over it. I like that they can sit, climb and play on top of it without sharp edges or corners. Second, it’s sturdy. My little ones are not the only ones who sit on it. My husband and I have used it to put on our shoes, we’ve used it as extra seating in our living room for guests, and you would never know that it is full of toys! Lastly, it holds a ton of stuff! I’ve included a photo of our ottoman so you can see how full it is. It is filled with the kids costumes, play backpacks, musical instruments, stuffed animals and more! Lastly, it isn’t super expensive. With toddlers and dogs running around my house, I don’t like to spend a ton of money on things that are going to get wrecked. This ottoman is priced perfectly because it isn’t so cheap that it’ll break in a week, but it isn’t something you’ll own 10 years from now. It will have a good life and help keep the clutter off your floor. That is a win in my mind! 🙂

Lego/Toy Storage Bag: I LOVE this bag! We have gotten many lego sets over the last couple of years, and having one place to put them is great! Lego boxes are bulky and take up a lotof space. Recycling lego boxes is fun for me at this point because it means less clutter! This storage bag is very inexpensive, holds a TON of legos, you can open it up easily for play time, and then push all the legos into the middle of the bag before pulling the cord to close it! The kids love it because it’s easy for them to pull out and play – and it makes clean up a breeze for them! It is a winner in the eyes of me as a mom, and in the eyes of my kiddos!

Wipes Boxes: We go through wet wipes like it’s our job! We regularly order a big box of wet wipes refills from Amazon and we’ve ended up with a bunch of wipes boxes as a result. I use them for organizing toys, crafts materials, stickers, crayons, and more. They are handy and you can easily label them with real labels or a permanent marker. They don’t break easily (and they are recyclable if they do), they stack nicely, and they are easy for the kids to open and close. As you can see from my photo, I like to group similar toys in a single box. For example, all of the kids Paw Patrol toys are together in one box. In another box I have all the Octonauts toys. When they ask me where something is, I actually know and can find it in one of the boxes. I can also easily put toys away because they have a “home.” Same goes for all crafting materials. When we go out to eat and come home with crayons, I toss them into the crayon box. When it’s time to color, I grab the whole box and the kids can have a blast! Get creative – there a ton of things you can organize with these boxes!

Mesh Door Organizers: Ok…don’t judge me…but I love door organizers. They are so handy and they are NOT just for shoes! I use them in my kids rooms for shoes and toys. I also put extra kids products like baby powder, baby lotion, sunscreen, diaper rash cream, and more in the upper pockets (far away from kids reach). I usually purchase things like butt cream and baby powder in 2-3 packs so I have enough on hand, and then group those items together so I can easily grab it when needed. Another fantastic use for door organizers is toiletries!

I have one on the door of my hallway closet and it is a huge time and space saver. It creates more space for towels, toilet paper, and other important bathroom/home items. It also helps me organize things by need. For example, I keep the kids bandaids with the Neosporin so that I can grab both things quickly and easily for any scrapes/cuts. Travel size soaps from hotels can easily go in one of the larger pockets and are easy to find/grab when you’re getting ready to travel. I keep toothpaste, extra toothbrush heads, and floss grouped together. You can also group together things like nail polish, polish remover and cotton balls. Keep items like nail polish and remover in the top pockets so they are far away from your kids reach. There are so many ways to group together similar items – making them easier to find while also freeing up space!

Family baskets: The kids are not the only ones who leave things all over the house. We adults do it too. Think about your sunglasses, wallet, watch, lipgloss, keys, earbuds, hair ties, and other random things that make their way around the house. My husband leaves his wallet, watch and items in the living room, kitchen, and dining room on a regular basis. To help you quickly relocate these random items, try using family baskets. Pick a small/medium size basket for each family member and put them in a handy location. As you find small items misplaced around the house, put them in the baskets. When a basket is full of toys, books, and other items, grab it and walk from room to room quickly putting things back. It will save you time and energy! My son brings toys from his room to the kitchen every morning. My kids love to take off their socks in the living room so they don’t slide around. Those are examples of items that can be tossed into their respective baskets for an easy trip back to their rooms. I’ve linked to a basket set that I like, but pick whatever fits you needs, style and budget.

Rainbow Pancakes

Getting ready for the weekend? This is a quick, easy and yummy breakfast idea for you and the fam! It’s also a fun way to get the kids involved. These days my kiddos are really into being my helpers. I love it and try to find new ways for them to help me each day. Last weekend I decided to make rainbow pancakes. They are super easy to make, fun, silly looking, and tasty!

I prepped the batter in a large bowl (as if I was making a normal batch of pancakes), and let the kids add the food coloring. My son loves green and blue, so I made sure he got to make the green and blue batter. My daughter likes all colors – so she made yellow and red batter. When you cook them – you can get creative! Make them solid, tie dyed, or whatever you like! The wacky colors make for a super silly breakfast – perfect for the whole family! The recipe is below – try it out and have a fantastic weekend!

INGREDIENTS:

  • 1 Cup – Kodiak Cakes Protein Packed Pancake Mix (or your favorite pancake mix – though I highly recommend you try Kodiak Cakes!)
  • 1 Cup – Organic Whole Milk
  • 1 Egg
  • Cooking spray
  • 4 small bowls
  • 4 spoons or spatulas to stir individual colors
  • Food coloring of choice
  • Your favorite maple syrup, agave, jam or fruit for topping

NOTE: This recipe is for a single batch. You can double this recipe easily and save the leftovers in the fridge or freezer. They reheat in the toaster beautifully! It’s so simple – you can makes these on the weekend or on a week day! Start any day with a little bit of silly, colorful, delicious fun! 🙂

INSTRUCTIONS:

  • In a large bowl, mix the pancake mix, milk, and egg. Stir until mixed well – though it will be lumpy like any pancake mix you make.
  • Divide the batter between the 4 small bowls (more if you plan to make additional colors).
  • Add food coloring to each bowl (decide if your kiddos are big enough to help). I added 15-20 drops per bowl for vibrant colors. Add more or less depending on the desired look of your pancakes. I let the kids add the food coloring which was really fun – and we counted the drops together so it was educational! Haha! Help them stir the batter until the food coloring is fully mixed in.
  • Heat your on pan (medium heat) and lightly spray with cooking spray. Pour batter and wait until little bubbles pop up. Flip and when both sides are golden brown, remove from the pan. There is always a little oil left on the pan so I tend not to use any additional cooking spray when making rest of my pancakes. Use your own discretion based on your pan and nonstick needs. You know your stove and pans – do what you need to do for the best pancake outcome 🙂
  • Make some of the pancakes solid, make some tie dyed, and have fun!
  • Serve with your favorite pancake toppings. My son likes berries on his pancakes. My daughter likes agave syrup. Have fun with the toppings or eat them plain. They will look silly – and they will be delicious!
  • If you have any left over, save them for the next day in the fridge and reheat in the toaster. Whenever I make pancakes, I make a double batch. They are great leftovers and you can even freeze them for a quick breakfast on the go! You’ll be amazed how great they taste after throwing them in the toaster!

Fruit Tart in a Snap!

Fruit tarts are so beautiful – and they look like they take a lot of work! They also look and taste like summer! The fruit, the freshness, the colors, and the lightness! I gotta tell you – this recipe is a new favorite for me. I plan to make it for holidays and guests instead of baked goods! It’s delicious, beautiful, and SUPER EASY! You are not going to believe how simple this recipe is. I always admire the fruit tarts at the bakery, and now I have a super easy way to make my own…and I like my version way better! I hope you give this a try!

INGREDIENTS:

  • 1 Small box – Vanilla pudding mix (instant or regular)
  • 2 Cups – Whole milk
  • 1 – Large orange
  • 1 – Graham cracker pie crust (pre-made)
  • A variety of fresh fruit for topping your tart (berries work especially well)
  • Fresh mint for garnish (optional)

INSTRUCTIONS:

  • Make your pudding by following the instructions on the box. I chose an organic vanilla pudding mix that I made on the stove. You can also use instant pudding and it will still be delicious – and will shave off a ton of cooking time! I actually think the instant pudding sets faster and holds much better in a tart like this. Most pudding box mixes take 2 cups of milk. Use organic whole milk as it has a fuller flavor than skim and is healthier than using cream.
  • Let the pudding start to set and cool down. Give it about 5 minutes or so,wash the orange and zest it into the pudding. If you don’t have a zester, I highly recommend you get one! I love it and use it often to zest citrus, ginger, certain spices, etc. Well worth it if you want to elevate an easy dish with extra flavor. Put the pudding into the fridge until fully set – based on the time specified on your boxed mix.
  • Once pudding has fully set, pour into the graham cracker crust and spread evenly. Zest a little more of the orange on top of the pudding.
  • Wash your fruit of choice. In this case, I chose strawberries, blackberries, and raspberries. Slice 4-5 strawberries (more or less depending on the size of the berries and your crust). Place 2 rings of strawberry slices around the crust. Then add the blackberries, and fill in with the raspberries. Pile them high or make a neat row.
  • NOTE: You can use whatever fruit you want – especially depending on what is in season and/or has the colors of the holiday you are preparing this for. Figs, apricots, blueberries, peaches and nectarines all work well. I would avoid oranges as they will release too much juice into the pudding, as well as pears and bananas as they get brown if the tart sits too long.
  • Zest a touch more orange on the top of the fruit.
  • Wash fresh mint, chiffonade and sprinkle on top of the fruit for a pop of herb freshness.
  • Put back in the fridge until ready to eat – and ENJOY! XOXO

 

Flower Power Experiment

Toddlers are so much fun and very curious! Gabe is full of energy and has a million questions a day. I don’t always have the answers, but I try hard to explain things as best as I can. One thing that he has been particularly interested in lately is how things grow. He has learned a lot about how things grow at school, and I wanted to do something fun to bring that learning home.

The Flower Power Experiment is easy and fun! Gabe will be 4 at the end of July, so he was a super helper for this experiment. Sofia is 22 months and a bit too young to be my helper. My kiddos are learning different things right now, but that doesn’t mean they can’t both benefit from our activities!

My favorite part about this particular activity is that Gabe and I did the experiment while Sofia was napping yesterday (fantastic 1:1 time for me and my big boy), and when she got up, she was excited about all the beautiful colors! Gabe got to learn about how plants take in water and why, while Sofia got to practice her colors in a fun new way!

What You Need:

  • White flowers – I went with 8 flowers so each kid could have a flower in each of the 4 colors we were using.
  • Food coloring – Don’t spend a lot on this since you aren’t eating the coloring at all.
  • Mason jars, clear water glasses, clear plastic cups, or other smallish containers to hold a couple of flowers on their own. I like mason jars because they are sturdy, great for food storage, art projects, baking, canning, and more.
  • A large measuring cup or something easy for your kiddos to pour water out of.
  • Water

The Experiment:

Step 1: Start by talking about the flowers. This is a simple explanation that you can use – or modify – for your kiddos.

“Plants absorb water through their roots through a process called osmosis. Can you say osmosis? The water travels up tubes in the stems to the other parts of the plants like the petals, and is used by the plant to make food. Can you show me the stems of the flowers? Can you show me the petals? We can’t see the plant drinking water because it happens very slowly. When we add food coloring to the water, the flowers drink the water and the food coloring travels up the stem and into the white flower petals! The colors help show us that the plant drank the water! Plants need water and food to grow, just like you and me!”

Step 2: Put out your mason jars and fill your measuring cup with water. I recommend filling one of them first to show your toddler how to be careful, pour slowly, and about how much water to pour. Then let them try it! The great news is water is easy to clean up! Keep a towel handy in case of any spills.

Step 3: Let your helper put in the food coloring. Just like with the water, show your kiddo how to do the first one. I showed Gabe how to put the food coloring in the first jar and we counted 15 drops together. I then let him do the other 3 colors while we counted to 15 together each time.

Step 4: It’s time to pick out the flowers for each jar. Let your helper pick 1 flower at a time. Using sharp scissors, cut the bottom of the stems so the flowers fit your jar/glass without tipping over. I used this as an opportunity to remind Gabe that adults are the only ones who get to use sharp scissors. They are off limits to kiddos – which includes him. You can hand the flower back to your helper so they can put one or two in each cup of color.

Step 5: Talk about what they think will happen next. Will the flowers look the same (white) even though they are drinking water with colors in them? Will they change colors? Will they have little spots or stripes of color or will they drink all the water quickly and be super dark..? Have a discussion about what they think will happen and why.

Step 6: Check on the flowers in a few hours, and again the next day. Talk about what they think has happened and look at the amount of color the flowers have taken in so far. After 2 days, cut another inch off the bottoms to refresh the stems and see if the flowers take up more water/color. Enjoy checking in on this experiment for a few days until the flowers start falling apart. Compost flowers when done.

Pumpkin Seed Pesto

Summer time is wonderful for so many reasons. Family time, fun in the sun, and deliciously fresh food! One of the best foods during the summer is pesto. It is delicious and can be used in so many ways. It’s also much easier to make than you think! Most pesto includes pine nuts, but for me, I use seeds. For those who are nut free (usually due to an allergy), or for those who just want to try something new, this is a nut free pesto made with pumpkin seeds that is super delicious! Give it a try – you won’t be sorry! 🙂

INGREDIENTS:

  • 1/2 cup – Pepitas (toasted pumpkin seeds)
  • 1 small garlic clove
  • 1 cup – Arugula leaves (packed)
  • 1 cup – Fresh basil leaves (packed)
  • 1/3 cup – Avocado oil (or extra virgin olive oil)
  • 1 tsp – Organic lemon zest
  • 1 tsp – Fresh lemon juice (use the lemon you zested)
  • 1 tsp – Red wine vinegar (I’ve also used champagne vinegar and it’s wonderful)
  • 1 pinch – Red pepper chili flakes (omit if you don’t want any spice)
  • Salt to taste

INSTRUCTIONS:

  • Before anything, you need to make your PEPITAS! This is a very simple process and worth doing fresh. In a medium size pan, heat your raw/shelled pumpkin seeds over medium heat. Keep an eye on them and stir occasionally as they start to brown. They will start to make a small popping noise as they get a beautiful toasted color. They should be done within about 5 min. Be sure not to burn them. That’s it – you made pepitas! Now for the pesto!
  • In a blender (MUCH easier to clean than a food processor) combine the garlic, arugula, basil, pepitas, avocado oil, lemon zest/juice, vinegar and red pepper flakes.
  • Blend until smooth and season with salt to taste.
  • Enjoy over noodles, zoodles, fish, chicken, etc.

 

  • TIP: It stores really well in a jar in the fridge. It lasts 5-7 days in the fridge and 3-4 months in the freezer. To make dinner easier – make a double batch and freeze it in an ice cube tray. Once frozen, pop them out and put in a freezer bag. Whenever you want to make a pesto dish,grab 1 cube and throw it in the pan! Talk about a great kitchen hack! 🙂

 

MY DISH!

I prepared a beautiful dinner using my pumpkin seed pesto and it was delicious! My husband was such a big fan that I made it again a couple days later while the pesto was still fresh 🙂

Below is a photo of the dish I made. I used yellow squash noodles (similar to zucchini noodles / zoodles). My grocery store makes these and has them in the fresh veggies section. If you prefer to make them, you can use a spiralizer. I’m always looking for ways to save on time, which is why I get them fresh and already prepped from the grocery store!

Heat a large pan with a touch of cooking spray. Add your squash or zucchini noodles and after about a minute, add a couple spoonfuls of your pesto. Start slow so you only use enough pesto to cover the zoodles. Do not over cook this dish or they will get soggy. They will heat through very fast (a couple of minutes).

Put your zoodles onto a large serving dish, or onto your individual serving plates. Wash a handful of cherry or grape tomatoes and slice in half lengthwise. Wash some fresh basil leaves and cut off the stems. Garnish the zoodles with the tomatoes and basil leaves. You can even put a little parmesan cheese on top for a little extra yumminess!

I topped my dish with sautéed shrimp. You can eat it as is for a fully vegetarian dish, or top it with your preferred protein.

Baked Asparagus Fries

To me, summertime means fun in the sun, bubbles in the backyard, and lots of fresh veggies! Asparagus is in season (along with many other amazing veggies) – so I wanted to share a yummy side dish that is a winner in our house! Dan and the kids LOVED these (as did I) – so I will be making them again very soon (as in this weekend)! I hope you give this simple recipe a try to share with friends, family, or just to devour yourself! They are fresh, delicious, and HEALTHY! Try something new – you won’t regret it! 🙂

INGREDIENTS:

  • 1 Bunch – Organic asparagus
  • 1 – Large egg
  • 1 Cup – Grated parmesan cheese
  • 1 Tbsp – Salt free “All Purpose Seasoning” (my fave is Bragg Organic Sprinkle 24 Herbs & Spices Seasoning)
  • 1 – Lemon
  • Sea salt and pepper to taste

INSTRUCTIONS:

  • Preheat the oven to 400 degrees F.
  • Line a baking sheets with parchment paper or foil for easy cleanup.
  • Using a fork, beat the egg in a bowl with about 1 Tbsp of water. Once the egg is thoroughly beaten, pour into a shallow dish.
  • In another shallow dish, stir together the Parmesan cheese and All Purpose Seasoning.
  • Next prep your asparagus. Wash it wellin cold water andtrim the ends. Pat dry with a paper towel (you can compost paper towels so be sure to do so).
  • Dip the asparagus in the egg mixture until they are fully coated.I recommend doing 3-4 at a time, unless you use a larger shallow dish.
  • Next move the asparagus into the cheese mixture evenly coatthem on all sides.
  • Transfer the asparagus to the baking sheet. Be sure to keep the asparagus in a single layer and not touching. If you need a second baking sheet, that is fine. Prep it the same as the first baking sheet. For reference – I was able to fit all of my asparagus on a single sheet without an issue.
  • Bake for about 10 min, until they are golden brown. If you really want them to have some color, you can throw them under the broiler for 1-2 min but don’t overdue it or they will burn.
  • Wash lemon and cut in half. Squeeze some fresh lemon juice on top of the asparagus. The pop of fresh lemony acid is perfect on this dish!
  • You can also sprinkle with a touch of sea salt and fresh cracked black pepper. It’s best to season these while they are still hot.
  • Serve them on their own or with an aioli! Enjoy!

The beauty of this recipe is that you can replicate it with other spring veggies and spices! Try this same exact recipe with cleaned French green beans! They are delicious and get a little crunchier than the asparagus. You can also add a little cayenne pepper for a touch of heat. I don’t usually add the cayenne because the kids are still pretty little, but it’s worth it for those who like some spice! Give both veggies a try and see how delicious this healthy new favorite is!

Ok friends – I want to share some of my favorite books. These are books we own and love. There are many more but I tried to put my top picks on this list to keep it from getting out of control. I’ll do my best to put them into categories, based on my opinion and how well they were received by our kiddos. I don’t have books for older kids at this time, as this list is based on my own experience, which is dictated greatly by our kids current ages.
