Carrot & Caraway Yogurt Dip

If you’re catching Spring fever a little early this year (I sure am) – this recipe is for you! It’s fresh, easy, healthy, and perfect to eat alone or share with others! Did I mention how yummy it is..? Keep scrolling down for the full recipe. You can see me above dipping a cracker into this delicious dip! The color is a gorgeous yellow/orange because of the carrots mixed with the yogurt – brightening up any table it happens to be sitting on. 🙂

Ingredients

  • 1 cup of shredded carrots packed tight – you can find them in the salad section of the grocery store. You can also use 1 cup of baby carrots if you have them on hand or that’s all you can find. Either works really well.
  • 2.5 Tbsp extra virgin olive oil 
  • 1/2 Tsp Caraway seeds
  • 1 Cup Greek yogurt – 2% works well for thickness or Full Fat Greek Yogurt a richer taste and texture.
  • Sea Salt & Black Pepper to taste

Instructions

  1. Heat a small pan on medium-low heat and toast the caraway seeds. Do not add any oil – the pan should be dry. Keep an eye on them to ensure they don’t burn. You want to shake the pan often and toast for 1-2 minutes until they are fragrant. Once they are toasted, take them off the heat and set them aside so they can cool to room temperature.
  2. Place the carrots into a blender or food processor. I use a Vitamix (blender) which does a great job and is easier to clean than a food processor.
  3. Add the yogurt, cooled caraway seeds and olive oil to the blender. 
  4. Blend until smooth. You may need to stop the blender and scrape the sides with a spoon or spatula to get everything off the sides of the blender. 
  5. Add salt and pepper to taste and stir well to combine.
  6. Enjoy!!! 

Shoo Flu Don’t Bother Me

We’re finally over the flu! Yay!!! This flu season has been brutal! I watch these people on the news who are being hospitalized and it breaks my heart! Being a mom of 2 toddlers means lots of preschool germs, which includes the flu. We went through a 3 week period where my daughter had the stomach flu, followed by my son, and then Dan and I. Then my daughter got sick with a fever and full blow influenza (I was scared), and lastly a double ear infection. My poor baby girl got it all! Through the mess and stress I was monitoring the kids temperatures and fluid intake. I did not want them to get dehydrated which can lead to much more serious problems!

I’m very lucky that my kids love water. We are a juice free house, meaning my kids drink water all day long and milk with meals. When my kids get sick, I always try to up their electrolytes. There are some fantastic freezer pops that work pretty well, depending on the age of the child. My daughter is 2, so she gets impatient when eating freezer pops and feels like they are too cold. On the other hand, my 4 year old son LOVES them! Enter Liquid IV. If you haven’t heard of it before, it is a Non-GMO electrolyte drink mix that hydrates 2-3 times faster than water alone. Liquid IV was a big help through this icky flu mess. When Sofia’s fever was at its highest, she was taking tiny sips of water and was very grumpy because she felt so miserable. I was really concerned about her water intake. Her tiny sips were not enough to keep her hydrated. I mixed Liquid IV with 16 ounces of filtered water in a large water bottle and shook it up until it was mixed well. I poured some into her sippy cup and let her taste it. She was happy and so was I. We used the Acai Berry which was fruity and appealing – it was a special treat for her being that we don’t give the kids juice. She still took small sips but I knew that she was getting way more electrolytes with the Liquid IV than without it. 

I did bring her to the pediatrician and was told to keep doing what I was doing and to keep an eye on her wet diapers to help me gauge how hydrated she was. Her fever broke, she started to drink more water on her own, and she is finally on the mend. I was a mess and her doctor was keeping a close eye on her as well. It was great to have some tools in my toolbox like liquid IV to help me get through it all! Sugar Cookie Hearts

Who doesn’t love a sweet treat for Valentines Day? These sugar cookies are fun to make and even more fun to eat! I’ve shared a simple sugar cookie recipe below – but you can easily purchase heart shaped cookies from the bakery section of your grocery store and decorate those! Talk about a bake free – super delicious – family friendly activity! Keep scrolling for some photos of Sofia as my decorating helper, and the recipe! Enjoy! XOXO

Ingredients

  • 2 Cups Butter
  • 2 Cups Sugar
  • 2 Large Eggs
  • 2 Teaspoons Vanilla Extract
  • 4 Teaspoons Baking Powder
  • 5 1/2 Cups Flour 
  • Heart shaped cookie cutters
  • A variety of sprinkles
  • White frosting 
  • Red, pink and black decorating frosting/gel (for writing & drawing fine lines)
  • Any other yummy treats you want to decorate your cookies with

Instructions

  1. In a mixer, cream the butter and sugar.
  2. Add the eggs and vanilla.
  3. Mix all dry ingredients in a separate bowl and add slowly to the butter mixture until fully incorporated. Do not over mix.
  4. Roll out on a lightly floured board to desired thickness. I’ve used powdered sugar to dust my board instead of flour and it worked well. Worth a try!
  5. Cut out your hearts and place on baking sheets with parchment paper.
  6. Bake at 400 degrees F for 7- 10 minutes.
  7. Keep an eye on them so they don’t over bake. They should be light in color with a little light browning on the edges. 
  8. Let the cookies fully cool on racks so the bottoms don’t continue to cook on the pan.
  9. Use white frosting (I used store bought) to smoothly top the cookies. A butter knife works well to smooth it on. 
  10. DECORATE to your “hearts” content! 🙂

Let’s talk about this cutie sweater…the price is right at $25.99. It also comes in 4 beautiful colors. The strange thing is it’s one size, which I don’t understand but am glad I took a chance on it. I’m an XS in most tops, and this fits me nicely. It isn’t huge but it’s not fitted either. It is cozy and has room. It’s a knit with some give to it, and it isn’t super short, so it is easy to tuck in. I read the reviews before ordering and it definitely fits a variety of sizes! I linked my exact jeans and boots as well – they are on repeat in my wardrobe. They both fit true to size.

My exact skirt, boots, and bag are all linked as well. The skirt it super versatile, is the perfect length, and works for almost any event. I would say it fits true to size but if you want it lower on the hips, size up. I’ve linked my boots in past posts and those who have followed my lead and purchased them love them too! They stay up well, the heel is stacked for comfort and height, and they come in 3 colors.

They fit like a glove, hold everything in while allowing me to run after my kiddos without busting a button! 😉 Super comfy and well worth trying!
